If churros and chocolate (or dulce de leche, nutella, vanilla, white chocolate, maple...) is your idea of breakfast (and nobody's judging!), head for Sweet Churro on Dame Street. It's directly opposite City Hall, just around the corner from the apartment. As well as churros, there are crepes and pancakes. Good coffee, too.

Great local bakery, coffee shop and sandwich bar that makes it own breads and pastries fresh every morning. It mostly supplies these to the cafes and restaurants around Temple Bar but also has its own outlet. There are a few tables inside and a few more outside. Breakfast will be a simple affair - coffee and a pastry or similar - but you can also get great sandwiches to take away if you're planning a short trip or picnic.
